Head Brewer, Jim Mills, founded Caldera Brewing Company, located in Ashland, Oregon in 1997. Caldera is dedicated and determined to produce uncompromised quality ales, lagers and cuisine. The restaurant features appetizers, artisan pizzas, breads, desserts, entrées, pastas, salads, sauces, soups and stocks all made from scratch by Chef Maggie Trujillo and staff. We strive to use locally sourced organic ingredients whenever possible. Our flours are grown in Oregon and Idaho and our cheese comes from family farms.
The restaurant has one of Southern Oregon’s largest bottle collections. Mills has been collecting bottles for thirty years. “I have been collecting beer bottles since 1983. It’s really nice to finally see them out of boxes and displayed for everybody to see,” Mills said. With 27 different Caldera beers on tap, you will be sure to find a beer of your liking. A recent collaboration with Big Island Brewhaus, Big Island Caldera Red Sea is on tap. Big Island Caldera Red Sea is Imperial Red Ale brewed with chocolate, molasses, pink peppercorns and Himalayan pink salt coming in at a whopping 8.8% alcohol. Caldera is also making its own non-alcoholic beverages. House made Ginger Ale and Hibiscus Rose Petal Ice Tea will be on tap this weekend with Root Beer soon to follow.
